Alcoholic drinks are classified into two types according to their production process as Distilled liquor and Brewed beverage. Awamori, soju (Shochu), whisky, brandy, etc belong to the Distilled liquor and Japanese sake, beer, wine, etc to Brewed beverage.There are two types of shochu known as "ko-rui" or "otsu-rui". The difference in the two results from the number of times they are distilled. "otsu-rui" has to be made with the single distilling method, a very traditional distilling method used since the 14th century. This type is popularly known as "Real-thing shochu" (honkaku-shochu.)

Awamori is a unique shochu from the tropical island of Okinawa. Awamori is distinct from other Otsu shochus. Shochu usually has two brewing processes before distillation, but Awamori needs only one because of the weather on Okinawa. Okinawa is a very hot island, so the product has to be protected from decomposition and bacteria. As a result, only one brewing process is used. Awamori has a deep fragrance and body. Awamori tastes much milder if it is aged for a longer period of time
